Homemade lemonade is easy to get right for a slush machine because you control the sugar exactly.

Ingredients

  • 150 ml lemon juice (fresh or bottled)
  • 160 g caster sugar
  • 1.45 litres cold water

Allergens to watch: Bottled lemon juice can contain sulphites — check the label. Always check the labels of the brands you use.

Method

  1. Dissolve the sugar in 300 ml of warm water.
  2. Add the lemon juice and the rest of the water.
  3. Taste — it should be a little sweeter than you would drink it, because cold dulls sweetness.
  4. Chill, then pour into the machine below the maximum line.
  5. Run the Slush setting.

Sugar check

160 g of sugar in 1,600 ml is 10 g per 100 ml — well above the 4% (Ninja) and 5% (Tower) minimums.

Check your own mix in the sugar & units calculator.
